We have a deep love for all things green at CB, but there’s something about bok choy that we absolutely love for a classic red kimchi. It has a certain sweetness alongside a pleasing gradient of texture from the paper thin greens to the fleshy crunchy white. We recommend it cut down and folded into an eggy pancake or fritter batter, the brine in a bloody mary, or alongside bulgogi, kalbi, or other grilled meat over rice.
