As varied as each village across the Balkans, ajvar is a chunky relish used to adorn the famous ćevapčići. Depending on what comes out of your garden, ajvar can have anything from just red pepper, to spicy chilis, eggplant, tomato, and whatever else your family might prefer. We are an “all the above” household. Besides the bounty of wonderful tomatoes available right now, we were able to track down some of the most gorgeous eggplants bestowed to this planet. Our version, due to being fermented, runs a bit more salty and sour than the traditional but the flavor from the fermentation makes it all worth it!
