Harissa Torschi



A spring staple of ours, fresh spring produce meets smoky, spicy harissa for an awesome kimchi-adjacent ferment. Torschi (or torshi, turşu in Turkish) is a catch all for a spiced mixed pickle in Middle Eastern, Slavic, and Baltic cuisines. The word is rooted in the Persian torsh meaning ‘sour.’ The sour, smoky crunch is at home alongside any grain based dish that needs a little pop; our favorite use is stirred into a tagine right before serving. You could also try it as an omelet filling or on a chicken sandwich.
