Herby Beets



Inspired by our love of the classic fall combo of dill + beet, we fermented skin-on golden beets and jarred them with a delicious herb paste to freshen up that deep earthiness. They make for an awesome addition to a fall salad with some bitter lettuces and a little roasted squash. Mixing the herby brine with a little olive oil will yield the best little vinaigrette that can be used to dress said salad, some cold chicken slices, or a hearty warm grain salad.
