Jun or jun tea is a drink brewed with green tea, sweetened with honey and fermented in the same process as kombucha with a scoby (symbiotic compound of bacteria and yeast). It is often referred to as the champagne of kombuchas because of its crisp tiny white bubbles.
While jun’s origins are ambiguous, it is commonly attributed to the khampa nomads of Tibet who were former monks turned warriors that drank jun to have superior fighting capabilities when kicking out invading Chinese forces.
Jun tea is a minimalist beverage only utilizing four ingredients. We lightly ferment our jun with Bee-utiful raw Chicago honey and NaturaliTea 2024 harvest Fukamushi Sencha (high quality deep steamed mountain grown Japanese green tea). We reverse osmosis filter Lake Michigan water and locally harvest our cultures. The fermentation process removes 2/3 of caffeine, so we cold flavor our brew with an extra concentrate of sencha, giving jun tea its dry finish.
We make no claims about superior fighting power in our product but jun tea does contain a plethora of probiotics, which can have a positive effect by increasing the amount of beneficial gut bacteria.
