Our sauercorn makes its return. We managed to get in on the last flush of the good local stuff before sweet corn season winds down. This year the golden kernels are complemented by finger radishes and their greens, as well as some leek, cherry bomb pepper, and a dried chili for a little kick. If you’ve tried our whole fermented radishes, this combo takes the best of both ferments and adds them together. The greens really deepen the mixture with their robust earthiness and minerality which complements the sweet pops of corn kernels. We recommend using it like any other corn relish: topping tacos, garnishing a whole fish, or stirred into a white gravy to top biscuits or some chicken fried chicken.
